Buffalo chicken pizza only works because of the sauce swap. Replace the tomato base with a vinegar-and-cayenne buffalo sauce and you change the entire acid profile of the pizza — sharper, hotter, less sweet. The chicken and the two cheeses then have to do the work that tomato usually does, which is why provolone shows up alongside mozzarella. It's saltier and it melts differently.
The ranch drizzle isn't decoration. Buffalo heat is cayenne-driven, which builds rather than spikes, and a cool dairy element is the traditional counterweight — the same logic as blue cheese with wings. Without it, the back half of a large pizza gets tiring.
Managing the heat
If you're heat-sensitive, ask for buffalo sauce on the chicken only, with regular pizza sauce as the base. You get the flavour signature without the sustained burn across every bite. Going the other way, asking for extra buffalo sauce is usually free or close to it, and a side of hot sauce for dipping the crust ends is the move most enthusiasts make.
Practical notes
This is a pizza that suffers more than most from sitting. The sauce keeps working into the crust, and twenty minutes in a delivery bag leaves the base softer than you'd want. If you're more than a short drive from the store, thin crust holds up better than hand-tossed.
Sodium is the number to watch here rather than calories. Buffalo sauce, provolone, cured seasoning and ranch stack up quickly — a couple of slices can carry a substantial share of a day's sodium. Skipping the ranch drizzle trims a meaningful amount if that's a concern.
