Potato wedges are the underrated side. They're cheaper than most alternatives, they hold heat well in a closed container, and they give an order some textural variety that another bread product simply doesn't.
Skin-on is the right call and most operators do it. The skin crisps harder than the flesh and holds seasoning better, and it means the wedges keep their shape instead of falling apart. The seasoning blend is typically paprika-forward with garlic and herbs — savoury rather than spicy.
Getting them crisp
Ask for well done. Wedges more than any other side benefit from extra oven time, and the difference between a standard bake and an extra few minutes is the difference between soft and properly crisp edges. Most stores will do it without charge.
They also stack badly. A deep container of wedges steams itself, and the ones at the bottom arrive soft. Nothing you can do about that at order time, but spreading them on a tray for a few minutes under a hot grill fixes it completely.
What to dip them in
Ranch is the default. Cheese dip works well. The one people overlook is marinara, which sounds odd and tastes surprisingly right — potato and tomato get along better than you'd expect.
Nutrition and value
Lower in calories than cheesy bread by a comfortable margin, and lower in fat than either wings or boneless bites. Sodium runs moderate to high depending on the seasoning load. Among the shareable sides, wedges are the least heavy option available.
They also happen to be one of the few items on most menus that's naturally free of dairy and egg, which makes them useful if you're catering to a restricted diet — though shared fryer or oven surfaces mean cross-contact is always a possibility worth asking about.
